BRUSSELS SPROUTS, YOU SAY?

Tonight was a night that all I wanted was pizza delivered to my doorstep instead of cooking a full meal.  Have you every had one of those moments?!  Whether it is a craving, or you have had a rough day or you just feel like doing whatever…. then just do it!   One meal of your favorite food will not take your goals off track, just like one healthy meal will not skip you straight to the end of your health journey.

After my order had been placed and was lovingly being prepped, cooked and wood-fired grilled by my favorite pizza joint down the street, I knew I had a little time to add a little something extra to the mix.  With some fresh Brussels sprouts in the fridge that just did not seem to get prepared over the weekend, I decided to play around with a different idea for cooking.  I usually roast them in the oven, and have grilled them too.  Neither sounded appealing this time around, so stove top in a skillet it was.  And they turned out absolutely a-ha-mazing!  Follow these 10 simple steps to absolute vegetable bliss!

1) Cut each Brussels sprout lengthwise in half.

2) Place skillet on the stove top over Medium heat.

3) Add favorite medium/high heat cooking oil.  I’ve become a huge fan of grass-fed butter lately so I tossed in about ½ stick.

4) Place all Brussels sprouts into the pan, cover with lid.

5) After about 5-8 minutes, poke with a fork to see if they are getting soft.

6) Once they are soft, remove lid and flip each to have flat side down.  Turn heat up to medium/high.

7) After a few minutes, check to see how brown they are and then cook to your liking.  I actually HATE burned food items, but these are really yummy when you cook them to almost black.

8) Mix them up, toss around a bit and then let set for just a little while longer so another part of the vegetable gets a good char on it as well.

9) Sprinkle with sea salt and pepper.

10) Enjoy!

One meal of your favorite food will not take your goals off track, just like one healthy meal will not skip you straight to the end of your health journey.
